Denial Is a Good Thing…

The hubby and I are busy snuggling on the couch right now.  Poor thing.  I’ve been doing computer stuff all week, and we have not been able to really hang out with each other.  Plus, he just got back from visiting a friend of a friend in the Landstuhl hospital who got hit by an IUD.  It is times like these that freak me out, but only for a few seconds.  I know that there is a chance that my Hubby might be killed when he gets deployed this coming winter, but I choose not to think about it a lot.  Being a military spouse is a very stressful thing sometimes, and there are just certain scenarios that are filed in the very back of the brain, and taken out momentarily when someone we heard of has been injured or killed in action.  I don’t want to get into a political debate (I’m just a hippie, and my husband is a conservative hippie), but our service members give so much to our country, and they deserve to be honored! :)

Enough of the serious stuff!  I just wanted to share another recipe that we tried for dinner:DSC02372

Parmesan Basil Grits with Chicken

  • 4 6-oz boneless, skinless chicken breasts
  • 1/2 tsp fresh ground black pepper
  • 3 3/4 cups low-sodium chicken broth
  • 1/4 tsp sea salt, divided
  • 1 1/3 cups quick grits (not instant)
  • 1 medium tomato (cut into 1/4 inch dice)
  • 3/4 cup grated parmesan cheese
  • 2 tbsp chopped basil

Salt and pepper all sides of chicken.  Heat a large skillet over medium heat, and spray with nonstick cooking spray.  Add chicken and cook until browned and cooked through (about 6 min per side). 

While chicken is cooking, bring broth and salt to boil in a medium saucepan over medium high heat.  Add grits in and whisk, whisk, whisk!  Return to boil, and reduce heat so that it simmers.  Whisk a few more times as the grits cook for 6-8 minutes.  If grits are too thick add more water/broth.  Remove from heat, and stir in basil and parmesan.  Cut chicken diagonal into 1/2 slices, and top with tomatoes.  Serve over the grits with a side salad!  Enjoy!DSC02376

Tomorrow, I think that I am going to that two hour yoga class.  Hopefully, it won’t hinder me for the tri on Sat!!
