This morning, I decided to make these:
They were wonderful! And easy! I’m sure that I could of just made these from scratch, but I already had the blueberry muffin mix out when I remembered that I had some pumpkin pie filling and extra blueberries.
Here is the recipe:
- Betty Crocker Wild Blueberry muffin mix that comes w/ can of wild blueberries
- 2 eggs
- 1/2 cup nonfat milk
- 1/4 cup canola oil
- 3/4 cup pumpkin pie filling
- 1/2 cup fresh blueberries
- 3 tablespoons flax seed
Preheat the oven to 400 degrees F. Stir in muffin mix with eggs, milk, canola oil, flax seed and pumpkin until just mixed in. Rinse can of wild blueberries and drain. Fold in wild blueberries and fresh blueberries. Spray muffin pan with nonstick canola spray. Add mixture into 12 muffin molds. Bake for 16-20 minutes until tops are slightly brown and crispy. Enjoy! 
Other than that, I have been working on a homework assignment for my advanced environmental planning class ALL day!! Steve took a break from football, me from hw, and decided to try some liquor that we picked up in Gander, Newfoundland. This stuff is called Screech. It was named that because that is the sound people make when they drink it. Lovely (being sarcastic incase you couldn’t tell).
I smelled it and was queasy. That was enough for me. Steve decided to try some.
This was the result: It actually does want to make you “screech”. 
After some intense laughter, we both decided to try some new tea from my Spice and Tea Exchange visit. It was lovely! The Spice and Tea Exchange company actually ship their tea too!!! I love the fact that their tea is all natural too with awesome creative flavors!! I WILL be buying some more of this stuff online when I run out! Unless, the Spice and Tea Exchange wants to send me some samples to try out..(hint, hint).
We drank the Black Chocolate Tea in our new mugs from my auntie Carol and Linda.
This is inside each cup. Usually, I’m not really into this corny stuff, but I think that these mugs are absolutely adorable!! Steve actually liked them too! Or at least he acted like he did!
On to more hw!!! Tomorrow, I am going to spin class for the first time in months! I hope that I don’t die! I have been craving hard exercise for weeks!! I guess my wedding was worth not working out every day for the past few weeks while on vacation! haha. Yes, it was! A full wedding recap is to come very soon along with my new workout schedule for the up coming few weeks!!

Shoot, I don’t think I’ve had a blueberry muffin since the good ole elementary school days. Those look great! I think I’d pass on the liquor too though…

I LOVE it!! I’m about 20 min from Kaiserslautern! It is getting dark and cold for the winter though. Only crappy part!

I know what you mean! I can;t wait for the time change here so it can a be a little lighter! SO yes! Take advantage of the traveling. I went to Prague, which is so beautiful. I went to Poland and France! Have fun!
I went to Prague and ran a half marathon there for my b-day this year! Amazing!! Who gets to say that they went to Prague and ran a half marathon on their b-day?! Oh trust me, we are!!
