Sandi, Steve’s stepmom, was kind enough to make us Apple Oatmeal Currant Muffins this morning. I chopped up a pear on the side, and I went back for seconds for another muffin. Delish!
She was kind enough to share her recipe:
Apple Oatmeal Currant Muffins
- 1 cup currants
- 1 medium apple, chopped
- 3/4 cup nonfat milk
- 1/3 cup of sugar
- 1/4 cup of canola oil
- 1 cup flour (can sub with whole wheat flour)
- 1 cup quick-cooking oats
- 2 teaspoons baking powder
- 1 teaspoon nutmeg
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon allspice
- 2 tablespoons of brown sugar
Preheat oven to 400 degrees F. Spray nonstick cooking spray in the muffin pan or line with paper baking cups. Combine currants, apple, milk, sugar, and oil in a medium mixing bowl. Stir together flour, oats, baking powder, cinnamon, nutmeg, salt, and allspice in a small bowl. Stir into currant mixture just until combined. Spoon batter into prepared muffin cups. Bake 20 minutes or until golden brown and toothpick comes out clean.
I am dying to run outside!! We visited with the parents all day though. It was great that we got to talk with them before everyone gets in town next week!!! We decided to stay another day with them just because. It was awesome not really doing anything. I haven’t had one of those kind of days in a while. We did, however, hit up the grocery store and got some Starbucks while were there!
I have to say that it was amazing! I haven’t had a Starbucks coffee since May! I wanted a pumpkin spice latte, but they are only good hot, and I was in the mood for an iced latte. I settled for a caramel macchiato. It was every bit of what I expected: light, sweet, and good!!! I know that I am lucky that I live in Europe, and I get to drink European coffee all the time, but I LOVE my Starbucks. I know that it is so wrong, but I do!!
Steve and his dad got some bonding in and worked on the pond all day. They both love doing stuff like that so it really wasn’t “work.”
For dinner, we grilled outside and had some filet mignon, baked potatoes, a salad, and broiled parmesan tomatoes. I feel like I’ve had way too much red meat lately! We usually only have it about 3-4 times a month, but I think that we have had it about twice a week the last month. Crazy!! We are on vacation, and I have been enjoying every minute of it!!
I think that we are going to watch The Hangover tonight. Good Night Everyone!!!
