Vegan 4 a Day!

Actually, I’m doing 4 days of veganism, but today is the day that a bunch of bloggers including myself tried to eat vegan.  A special thanks goes out to Mish and Katy for starting all of this!

I was very apprehensive about eating vegan today, but I made it work!  Did you know that Life cereal is vegan?  I had no idea, but I was happily surprised this morning while I was eating it and googling it at the same time!  I ate it with some soymilk and half of that nasty looking banana.

I had a glorious tempo run and resistance training session including abs today!  I felt like crap when I woke up, but headed to the gym anyway and was so happy that I did!  I warmed up for a mile, then ran at a little faster pace than my marathon pace.  I don’t like running fast, but I just accepted that it was going to be uncomfortable for the next 3 miles, and it went a lot faster after that!  Then, I cooled down for about a mile and a half.  When I got home, I was starving!!  I drank this Green Monster down fast!!  DSC03795

  • 2 1/2 cups spinach
  • handful of blackberries
  • 1 cup vanilla soymilk
  • 1 banana
  • ice

Yum!  So far, so good on the vegan front…

For lunch: Spicy veggie soup containing vegan macaroni DSC03799

with hummus toast and green tea with NO HONEY.  The tea was okay without the honey, but I think that it tastes better with it!  Did you also know that most bread from Rudi’s organic is vegan?  I was also pleasantly surprised about that too!DSC03801

For my snack before spin class tonight, I had a piece of toast with pb.DSC03804

I think that I had a fever before I went to class, but I went anyway.  Who else was going to teach the class?  I felt a little weak during the class, but it still went well.  I actually had 12 people tonight instead of the usually 6.  It was exciting!  After the class, I felt really weak and hot.  I think that I’m getting sick!!!  Ahhhh!!

We made lemon stir fry and jasmine rice for dinner.  Steve got to put chicken on top of his stir fry, and I didn’t!  :( DSC03806

For dessert:DSC03807 I could only eat half of this.  It was way rich!

Well, overall my vegan day wasn’t that bad at all.  It took some creativity and a little bit of planning on my part, but it was still good.  Now, I need to figure out what I’m eating tomorrow!  3 More days until I can have cheese! :)

I’m off to bed because I’ve got to teach another spin class at 7am tomorrow!

Wow vegan for a whole four days! I don’t know that I could do it for a day! All your meals look sooo yummy!

The picture of you cycling in your header is gorgeous…who took it? How?

The peanut butter-chocolate combo is a rich one, but for some reason, I’ve never had a problem finishing it. :)

yay for going Vegan…I dunno if I could do that. I should prolly start small and start with a few days veg.

also, congrats on the AFAA cert.. that’s awesome!
