It’s Foodie Friday! If you are new, on Fridays I try to have some foodie pics on the blog with maybe a recipe or two. Tonight, I stuffed my face, and it was oh so good. Sigh…just thinking about it. I got together with my little running group tonight, and we all cooked dinner together. It was great to be in the kitchen together, and then to sit down at the table together with good conversation. It was exactly what I (and we) needed the night before our 16 mile run tomorrow.
You will have to bear with me on these photos. My camera focuses sometimes, and sometimes it doesn’t. And since my husband is not made out of money (he reads this blog even while he is deployed. love you, honey!), AND my spinning instructor job over here in Germany is volunteer (yes, you read that right), AND I’m not getting paid to get my masters full time, I will have to wait until our tax return comes in to buy a new camera. Tonight I was using a friend’s camera, and her settings were way off!
We made Bruschetta (the tomatoes were actually really red):
I loved how they weren’t drenched in olive oil like when you get them eating out. A little is fine, but when your mouth is slick from eating one piece of bruschetta, you know that is way too much!
A Salad containing arugula, spinach, steamed green beans, yellow peppers, tomatoes, green onions, fresh parsley, avocado, and lemon/olive oil dressing.
Now, for the main course: whole wheat pasta w/ spinach thrown in the last minute of boiling. Drain. Toss with a little olive oil, salt, and pepper. Top with roasted pine nuts and a dollop of ricotta cheese. Amazingly simple and tasty at the same time!
Again, sorry about the pics! My hope is that I will have a new camera within the next two weeks before London, and I promise better quality pics like I had when I first started this blog!
